We know that nutrition is one of the most important mechanisms for preserving population health and slowing disease progression. U of T’s development of the Glycemic Index in 1981 is now a cornerstone in the world’s efforts to control diabetes and other chronic diseases. Today, our scientists are working to optimize diets based on our personal genetic code, engineer dietary supplements to prevent vitamin deficiencies, and meet the nutritional needs of vulnerable and marginalized groups within Canada and globally.
